Mom’s Potato Salad

The Queen Mum (this would be Dad’s mother-in-law) has a great recipe for potato salad that has been a family favorite for decades. She can’t recall where the original came from, and has “modified” whatever the original was, but she can’t quite recall how. This is no doubt the story of most “old family recipes.”

I tried my first batch this weekend with acceptable results, according to the Queen. Here’s how it goes:

Ingredients for a batch to serve 6 or so:

  • 5-7 russet potatoes, depending on average size
  • 6 eggs
  • Miracle Whip(R)
  • Pickle relish
  • Mustard (must be the brand that rhymes with “wrenches”)
  • Pimento
  • Salt and pepper
How-to:
  • Boil the potatoes until barely done the way you like them
  • Hard-boil the eggs
  • Let the potatoes and eggs cool. Peel and dice. Place in a large bowl.
  • Mix the MW, relish, mustard and pimento. Add to bowl and fold so as not to break up the potatoes too much.
  • Add S&P to taste. Chill in fridge for several hours.

Sounds easy, right? You may have noticed some apparently missing instructions, like the quantities of most everything. This is the art of the recipe. You figure them out according to how much dressing you like and how much color accent you want (from the pickles and pimentoes). Some of you may be in shock or revolt over this, but take it from me, this is a great recipe to spread your cooking wings with. You can hardly go wrong…well, maybe you can go wrong, but you can hardly be blamed! 🙂
  1. Hi, I just wanted to let you know that the recipe is so similar to my mother’s potato salad recipe. Actually, she never had a recipe…I just watched her make it and she never measured. She cut up dill pickles in hers and added some of the pickle juice. I can’t remember her putting pimentos in hers. I still call it “my mother’s potato salad when I make it.
