Easy Southern Green Beans

A friend, Betty Lou M., who grew up in Richmond, Virginia, says she has made this recipe ever since before she was a young bride 60+ years ago. These beans are very easy and mighty good, a great side for any occasion. We think they would probably be even better with fresh, local green beans, but we’ve been too lazy to try this. We’re pretty sure these beans are close to the ones at Cracker Barrel.

Ingredients
  • 2 cans green beans Your preferred cut (French, slanty, etc.) of green beans, drained. We encourage experimentation here, but the cheapest, store-bought beans will do.
  • 3 slices bacon
  • 1/2 cup cider vinegar
  • 1/2 cup sugar

Instructions
  1. Dice the bacon slices and saute in a large sauce pan until just browned.
  2. Stir together the cider and sugar. Add to the pot with the green beans right out of the can. Drain them first, or you'll need to cook them down uncovered to concentrate the flavor.
  3. Cook, covered, on low heat for 45 minutes.
  4. Remove the cover and cook off any unwanted liquid. Again, this is worth the extra time, but you can shorten the time considerably by draining the bean s first.
  5. Serve or store. Enjoy!
